grist isn't just our name... it's our foundation.

In 1827 Honeoye Falls, Hiram Finch built the historic Lower Mill and started the production of grist. With this newly constructed mill, Finch hoped to attract commerce to the area, fueling a prosperous community. The key to his master plan? The falls.

Finch successfully harnessed the water to power the entirety of the four-story stone mill. This building was deemed “The Lower Mill” to distinguish it from the red mill just across the falls. The Lower Mill was considered one of the finest grist mills in western New York, but in 1901 the interior burnt down, forcing reconstruction. Although the damage was extensive, the stone exterior held strong, and The Lower Mill was back in business after six months.

For a century, this mill served the town of Honeoye Falls. Unfortunately, grist production was forced to shut down in the 1930s due to the Depression. Since then, The Lower Mill has housed a plethora of businesses and even underwent large-scale renovations in the 1970s. As the newest tenants of this historical landmark, grist. aims to honor its rich history as a source of pride in the Honeoye Falls community. With a seasonal, shareable menu prioritizing local ingredients, curated craft cocktails, and a selective wine list, grist. is a culinary adventure where food and cocktails collide.
