In late 2024 Honeoye Falls natives, Joe Bucciarelli and Lindsay Tondryk, alongside Lindsay’s husband Seth Scott, began exploring the opportunity to bring something special to the historic Lower Mill Building. Inspired by the character and history of the space, they saw the potential to create more than just a restaurant — they envisioned an experience that would become a destination within the community, while honoring the building’s unique heritage.

Shortly after, Executive Chef James Campolieto joined the conversation. With formal training from the Culinary Institute of America and a passion for creating memorable dining experiences, Chef James helped shape the culinary vision that would become grist. In early 2025, construction officially began, marking the start of turning that vision into reality.

From the beginning, the mission behind grist was clear: to create a dining experience that feels elevated yet approachable — a place where exceptional food and hospitality come together in a warm, inviting atmosphere. With a thoughtfully curated seasonal menu, handcrafted cocktails, and a carefully selected wine list, grist aims to deliver refined dining without sacrificing comfort or authenticity.

Set within the historic Lower Mill Building, grist embraces the character of its surroundings while creating a space where guests can gather, celebrate, and enjoy unforgettable meals in a setting unlike any other.
